Lemon Bars

Recipe from

1 cup all-purpose flour

1/3 cup butter, softened

1/4 cup powdered sugar


1 cup sugar

2 eggs

2 tablespoons all-purpose flour

2 tablespoons lemon juice

1/2 teaspoon lemon extract

1/2 teaspoon baking powder

1/4 teaspoon salt


Combine the flour, butter and powdered sugar; pat into an 8-in. square baking pan. Bake at 375 degrees for 15 minutes.

Meanwhile, in a large mixing bowl, combine sugar, eggs, flour, lemon juice, extract, baking powder and salt in a mixing bowl. Mix until frothy; pour over crust.
Bake for 18 to 22 minutes or until light golden brown. Dust with powdered sugar.
